Pale straw in colour, aromas of peach and citrus play with notes of spicy oak.
The palate displays stonefruits and has a lovely creaminess that comes from
extended maturation on lees. Delicious, complex and textural, this wine’s
full-bodied character is balanced by a good squeeze of acidity.
Most of the fruit for this wine was grown on the Taresch family vineyard in the cool and elevated Strathbogie Ranges of Central Victoria. The majority of the wine was fermented in a new 3000L French oak cask, which contributes to the spicy oak character. We didn’t inoculate with yeast, but let a ‘wild’ ferment start spontaneously from yeast that came in
on the grapes, or was floating about in the winery. There was also a small component fermented in a stainless steel tank with a pure yeast culture, which contributes freshness. On the palate there is a suggestion of creaminess from extended maturation on lees. This is a lovely complex wine with a great length of flavor.
