tasting note

We picked the Pinot Noir grapes quite early in the season (February 9th). This catches the fruit while it still has crisp acid and only a modest level of sugar. The modest sugar means modest alcohol – 12.8%, which helps make balanced Rose without the warm alcohol of riper grapes. We left the juice in contact with skins for around half a day to pick up colour before pressing and fermenting.

The wine spent a short time in barrel and large cask prior to bottling. The component in the cask we left on lees and stirred each week to re-suspend the dead yeast cells in wine, which adds a creaminess to the texture.

This rose has a lovely pale salmon pink colour, and has restrained aromatics with a note of potpourri and wild strawberry. On the palate the wine has a freshness and crunch.

Food is optional! But tasty with melon and prosciutto.
