The grapes were left to hang and get super ripe, the juice rich and thick like nectar. About 2/3rds through ferment we chilled the wine to stop the yeast before all the sugar had been converted to alcohol. The wine was matured in French oak barrels for 11 months. The result is a wine with a lovely soft gold colour and an aroma of sweet spice from summer fruits including apricots.
