Single Vineyard Cabernet Sauvignon 2025
The fruit for this wine was grown at Booroola Vineyard in the Strathbogie Ranges of Central Victoria by our friend and neighbour Carrillo and Ziyin!
It has a deep colour, and shows blackcurrant and bramble primary fruit, with a sweet spice and attractive wood smoke character from 14 months barrel maturation. This is an impressive full-bodied wine with the firm compact tannins of high quality cabernet, balanced by good intensity and length of flavour.

We harvested on March 8th, 2025. The fruit was de-stemmed and crushed into a single fermenter which uses a French made high volume submersible pump (Called a Turbo Pigeur) to periodically flood the cap of skins with fermenting juice and help extract colour, flavour and tannin. We pressed after 17 days on skins. The wine went into oak for 14 months of maturation prior assembling the blend and preparing for bottling.

"Destemmed, crushed to a single fermenter, 17 days on skins, pressed, 12 months' maturation in oak. There's a compact, firm-tannined cabernet here, but it comes matched to an attractive elegance. As it opens, it brings trademark cassis, black berries, herbs and leaf aromas, with some regional mint and earthiness. Firm, cherry-pip dry tannins carry dark fruit flavours, woodsy spice and herbals long, with hints of olive and dark chocolate. But it is the ribbon of violet florals that carries the wine through so beautifully. Built to last". - Jeni Port
