The fruit for this wine was grown in the collimate Coombe Fram vineyard near Coldstream in the Yarra Valley. Fruit was picked on 18th Match with a clever high -tech harvester that leaves pretty much all the stalks and leaves in the vineyard, with just whole berries arriving at the winery.
After a short cold soak, we inoculated with a pure yeast culture (UvaMax - a hybrid yeast cross of two closely related species Saccharomyces cerevisiae and Saccharomyces uvarum). the wine was in barrel for a remarkably short time - just 6 weeks. This short barrel maturation gives some exposure to oxygen which helps stabilise the wine and soft tannins while preserving primary fruit.
