The Victorian 2023 Shiraz
Heathcote
It has a deep red colour showing a youthful purple at the rim. It is quite aromatic with red currant and sweet spice aromatics. There is also a chocolatey note – this is partly from oak maturation, but also a regional characteristic associated with good Heathcote fruit. The tannins have a lovely ripe plushness to them, and the wine feels rich and full bodied.

We harvested Tait’s fruit in several batches starting March 24th and running through to mid-April. Each parcel has a slightly different character – for example more dark fruit flavour from the riper later picked grapes compared to earlier parcels which are spicier. We fermented in a combination of open and closed fermenters. The open fermenters can be more savoury with the closed fermenters often showing stronger primary fruit flavours. We used a couple of different yeast cultures. All these little differences add to the layers of flavour which build complexity.
The wine was stored for around 18 months in a range of small oak barrels plus some 1000L and 3000L French oak casks.
