The fruit for this wine was grown on Sarah Gough's Box Grove Vineyard near the township of Avenel and Nagambie in Central Victoria.
Making prosecco is interesting, including that we ferment it twice! We picked the grapes on February 18th. The fruit came in with the lowish sugar level we want for making sparkling wine, with just enough sugar to make a wine of around 11% alcohol. We inoculated with a pure yeast culture called prise de Mousse which is a Champagne isolate and let this ferment to dry. The interesting bit is that we then added sugar to this base wine, and more yeast in a pressure tank for the second ferment which makes the wine bubbly(Charmat method)!
